Not only was this dish easy but it was soooo good! We were hopping all over the place on Saturday (as we usually do). Lobster had taken our niece to the Circus and I was spending the day with Ashton. After the circus we met for a day at Dinosaur Park which is always lots of fun. It was such a gorgeous day which made it even more enjoyable! Fall is my FAVORITE time of year. Everything about to me is PERFECT! The leaves are just starting to change and the park is hovered by trees so it was really beautiful.
By the time we dropped Jillian Grace off at home and got back to our house, it was nearly 6:30. We were starving and this was such a great, quick meal. I always forget about white chicken chili and how yummy it is. I am not always a fan of the seasoning mixes because I don't like much salt (if any) in my meals. But McCormick seasoning mixes have low salt versions and on occasion, I don't mind using them. This was the perfect meal for a crisp, fall evening. It was sooo good that night but even BETTER as leftovers. And if you know me, you know I HATE leftovers....so you know it HAD to be good :) The only thing that would have made it better would have been some cornbread. ENJOY!
Hearty White Chicken Chiliadapted from McCormick
1 pkg. McCormick White Chicken Chili seasoning mix (I used low salt version)
1 lb. boneless skinless chicken breasts (I used one rotisserie chicken)
1 1/2 - 2 cups chicken broth
1 14.5 oz. can white beans, undrained
1/2 tsp white pepper (we like things a little spicy. You can omit this if you want)
Sour Cream
Cheddar Cheese
Shred chicken and place in medium saucepan or dutch oven. Stir in seasoning packet, beans and chicken broth. Bring to a boil. Cover and reduce heat to simmer for 10 minutes.
