Before You Get Started....

Have you ever been given a recipe and followed it EXACTLY like it was written and when it came out it did not look or taste the same as it did when your friend made it???  There are some reasons this could be and some things you should know before baking.

1.  Always use salted butter unless the recipe calls for unsalted.  I made my favorite chocolate chip cookies the other day and all I had left in the fridge was unsalted.  Let me tell you, it makes a HUGE difference.
2.  Always use parchment paper or a silicon mat on your cookie tray.  This helps regulate the temperature in your cookies so they come out perfect every time.  Not to mention clean up is easy breezy.
3. Cold dough normally bakes better.  Throw your dough in the freezer for five minutes or so before baking.
4.  DO NOT OVER BAKE!  Take your cookies out when they still look "not quite done".  This will keep them very soft and yummy.  Not crunchy in 30 minutes.
5.  Store them in a tight container or freeze them until you need them.  This keeps them fresh for much longer.
4.  Make sure you are not handling dough with your bare hands.  Pastry dough and cookies can be temperamental.  Your body temperature can mess up the consistency. 
5.  Do not "scoop" your ingredients.  Instead of dipping in your measuring cup for flour and sugar, use a spoon to get it into them measuring cups.  This will alleviate the air that can get in there, causing you to get more or less flour than the recipe calls for.
